By: Aimee – VegEzy This is one of those easy weekly options that you can prepare Sunday night and have different variations all week. It is also easy to customize for a party or family all the toppings can be put on a lazy susan so people can build their own.

Makes for a fun time and it guarantees everyone is going to like their meal that they made themselves. This is one of those things where you use your own judgment on size and portion of veggies, protein, nuts, seeds and dressings that you want.

Vietnamese Vegan

Servings:  1 Person



  • Grain Options (1-2 cups of Grains)
  • brown rice
  • millet
  • quinoa
  • soba noodles
  • raw rice made with jicama or cauliflower (not really a grain but it mimics rice if you pulse it in a food processor a very tasty raw option)
  • Protein Options (1 - 2 cups of Protiens)
  • baked tofu
  • ​temphe
  • chickpeas
  • sprouted lentils for a raw option
  • ​mushrooms marinated and cooked or dehydrated to warm (for raw)
  • Veggie Options
  • 1/2 head of broccoli
  • 1/2 diced purple onion
  • 1/2 head of purple or green cabbage
  • 1-2 grated carrots
  • 1 avocado
  • 1 cup cherry tomatoes
  • 1 grilled sweet potato
  • 1/2 cup diced olives or oil-cured
  • 1-2 leeks chopped
  • 1 pepper sliced
  • Nuts and Seeds Options (1/4 cup)
  • hemp seeds
  • chia seeds
  • flax seeds
  • sunflower Seeds
  • crushed nuts (almonds, Brazil nuts, walnuts) (make sure you soak your nuts first)
  • Seasonings, Spices, Dressings Options
  • sea salt or brags aminos to taste
  • 1 tablespoon olive or flax oil (optional)
  • squeeze of lemon, lime or orange
  • dash of cayenne


  1. Cook the grain first
  2. Prepare the protein
  3. Finely chop the veggies
  4. Toss veggie, protein, with grain if meal is mostly raw mix in the veggies while the grain is still hot this cooks them a bit. Sprinkle nuts and seeds over the top
  5. Season and dress to taste
